![]() Should not take more than 22- 25 minutes. I made small balls, pressed half cashew on each of them and let them bake in a pre-heated oven at 300 degree F. Or you can make balls which will later be dome like cookies ( similar to nan khatai) and place them on a baking sheet lined with parchment paper. Now there are two ways to make- either you can roll the dough and cut small square pieces out of it or any shape you like. Wrap in a plastic wrapper & let it rest for 20-30 minutes. ( I did not, For me 2 tblspn were enough ). Add a talblespoon milk more if u need to, to make a soft dough. Now add dry ingredients to butter n sugar mixture little at a time. Add vanilla essence, milk, cashews and mix well. In another bowl whisk butter and powdered sugar. Ingredients: 1 cup all purpose flour Butter – ½ Cup or 1 stick- 4oz (at room temp.) Powdered Sugar – ½ Cup Vanilla Essence – 1 Tsp Milk – 2 tbsp Cashews – 8-10 powdered and 4-6 halves for garnishing Cocoa Powder – 3 Tbsp ( I used Hershey’s extra dark coca powder) Baking Powder – ½ Tsp Salt – 1/8 tspn (skip this step if your are using salted butter) Process: Grind the cashews, cut the rest in halves for topping. He asked- you made them? I said- Yes dad. While talking to my dad back in India, I showed him my choco cashew cookies and he said- are wahhhh !!! what are those? I said- dad, these are choco cashew cookies. What could go wrong, right? So the very next day I made these & he liked it. Just after then i thought why not try and make these at home… Why not experiment. Just after he ate nan khatai’s he said- these are almost at par with chocolate cashew biscuits he has daily (Britannia choco cashew cookies). Me and my husband, we both are very fond of chocolate. Just after I made nan khatai’s, I thought to experiment something with them.
